Ice cream is one of the most loved treats among both children and adults. However, not every cold and creamy product available in the market is actually ice cream. Many products are frozen desserts, which may look and taste similar to ice cream but differ significantly in terms of ingredients and quality. Understanding the difference can help consumers make informed purchasing decisions.

The biggest distinction between ice cream and frozen dessert lies in the type of fat used during manufacturing. Ice cream is made from milk, cream, and milk fat, giving it a rich, creamy flavor and a smooth texture. In contrast, frozen desserts are prepared using vegetable fats, such as palm oil, palm kernel oil, or other plant-based oils instead of milk fat. This difference affects both the taste and the overall texture of the product.

Ice cream melts quickly in the mouth and offers a richer, creamier experience due to its dairy fat content. Frozen desserts, on the other hand, may leave a slightly oily or waxy sensation because they contain vegetable fats. However, the difference in taste and texture may vary depending on individual preferences.

To protect consumers from misleading labeling, the Food Safety and Standards Authority of India (FSSAI) has laid down clear regulations. If a frozen product contains vegetable fat beyond the prescribed limit, it cannot be marketed as “Ice Cream” and must be labeled as “Frozen Dessert.” Manufacturers are legally required to display this information clearly on the packaging so that consumers know exactly what they are buying.

Price can also offer a general indication. Since milk fat is more expensive than vegetable fat, genuine ice cream is usually priced higher, while frozen desserts are often more affordable. However, experts advise that price alone should not be used to identify the product.

Nutrition experts recommend reading the ingredient list before purchasing any packaged frozen treat. If the label mentions “Milk Fat”, the product is genuine ice cream. If it lists “Vegetable Fat,” “Palm Oil,” or “Palm Kernel Oil,” it is a frozen dessert. Checking the label allows consumers to choose the product that best suits their taste, dietary preferences, and budget.
