How to Prepare Saffron-Pistachio Phirni

To begin, wash the rice thoroughly and soak it in water for around 20 to 30 minutes. Then drain the water and coarsely grind the rice. Make sure not to turn it into a very fine paste, as coarsely ground rice gives phirni its traditional texture.

Next, heat milk in a heavy-bottomed pan. Once the milk comes to a boil, reduce the heat and gradually add the ground rice. Keep stirring continuously while adding the rice to prevent lumps from forming and to ensure that the milk does not stick to the bottom of the pan.

As the mixture cooks over a low flame, the milk will gradually begin to thicken. Once it reaches a slightly thick consistency, add sugar according to your taste and allow it to dissolve completely. Then add saffron strands that have been soaked in a small amount of warm milk.

The saffron gives the phirni a light golden colour and a distinctive aroma. Now add finely chopped pistachios. Other nuts, such as almonds and cashews, can also be added according to taste. If you enjoy the flavour of cardamom, you can add a small amount of cardamom powder as well.

Continue stirring and cooking the mixture until the phirni becomes thick and creamy. Once it reaches the desired consistency, turn off the heat and allow it to cool at room temperature for some time.

Transfer the prepared phirni into small earthen kulhads or serving bowls. After it has cooled, place it in the refrigerator to chill. Before serving, garnish it with chopped pistachios and a few strands of saffron.
