He shared insights on the importance of patience and technique in developing the depth of flavors in Wazwan dishes. “Each dish is a labor of love that takes hours to cook. The slow-cooking process allows the meat to absorb the delicate blend of spices and gives the dish its signature taste,” Chef Khan explained.
The festival attracted food lovers eager to experience the nuanced flavors of Kashmiri cuisine without having to travel to the Valley. Guests appreciated the opportunity to savor authentic dishes prepared with traditional methods, accompanied by cultural performances and displays that highlighted Kashmir’s rich heritage.
“Our aim was to create an immersive experience that honors Kashmir’s culinary traditions,” said Priya Sharma, the events coordinator at Novotel Visakhapatnam. “The response from visitors has been overwhelming, and it’s heartwarming to see so many people embrace the unique flavors and stories behind each dish.”
In addition to the main courses, the festival showcased traditional Kashmiri breads like Girda and Lavasa, as well as desserts such as Phirni and Shufta, completing the dining experience with authentic regional tastes.
The successful run of the Kashmiri food festival at Novotel Visakhapatnam has encouraged the hotel to consider similar events celebrating India’s diverse culinary landscapes, aiming to bring regional flavors closer to the city’s residents and visitors alike.
