If You Love the Taste of Rabri Kulfi, Make It at Home: An Easy Method for Thick, Creamy and Grainy Texture

Kulfi holds a special place among Indian desserts. Traditionally prepared by reducing milk until it becomes thick, kulfi is still loved for its rich taste and distinctive texture. Rabri kulfi, in particular, stands out because of its creamy milk layers, aroma of cardamom and the flavour of dry fruits. The grainy, rabri-like texture of kulfi available in the market is especially popular. However, with a few important techniques, you can create a similar texture at home.

How to Make Rabri Kulfi at Home

Start with full-fat milk and pour it into a heavy-bottomed pan. Heat the milk over medium heat initially, then reduce the flame and allow it to cook slowly. The purpose of slowly reducing the milk is to evaporate excess water and thicken it.

While the milk is cooking, pay close attention to the bottom of the pan. Stir it from time to time to prevent the milk from sticking or burning. As a layer of cream forms on the surface, gently lift it with a spoon and stick it to the sides of the pan. Gradually, layers of cream will accumulate along the sides.

Once the milk has thickened sufficiently, scrape the cream from the sides and mix it back into the milk. This gives the mixture its characteristic rabri-like texture. Add sugar according to your taste and stir well until it dissolves completely.

Add Cardamom and Dry Fruits

For extra flavour, add cardamom powder to the mixture. You can also add finely chopped almonds, pistachios and cashews. The quantity of dry fruits can be adjusted according to your preference.

If you want a distinctly rabri-like texture, avoid making the mixture completely smooth. Leaving some small cream layers intact will help create the desired grainy texture.

Freeze the Kulfi

Once the mixture is ready, turn off the heat and allow it to cool. Pour the cooled mixture into kulfi moulds and cover them properly before placing them in the freezer.

The kulfi needs to remain in the freezer until it is completely set. Depending on the freezer and mould size, this may take several hours.

How to Remove Kulfi from the Mould

Removing frozen kulfi from its mould can sometimes be difficult. To make the process easier, place the outside of the mould in water for a few seconds. This will slightly loosen the outer layer of the kulfi.

After that, gently pull the kulfi out of the mould.

Garnish the prepared kulfi with chopped pistachios and almonds and serve chilled. It can be enjoyed by both children and adults.

The Secret to Perfect Rabri Kulfi

The most important ingredient in making delicious rabri kulfi is patience. Instead of trying to thicken the milk quickly over high heat, cook it slowly over a low flame for better results.

Regularly collecting the cream that forms on the surface and mixing it back into the reduced milk is the key to achieving the rich, layered and slightly grainy rabri-style texture that makes this kulfi so special.
