The Water Test Is the Easiest

Fill a glass or deep container with water and place the egg inside. If the egg sinks to the bottom and lies completely flat, it is generally fresh. If it sinks but stands slightly upright, it may be older and should be used soon.

If the egg floats on the surface, the air cell inside may have become larger. Such an egg may be quite old, so it should be cracked open and its smell and condition checked carefully before use.

Hold the egg close to your ear and shake it gently. If you hear a noticeable sound or feel the liquid moving inside, the egg may be old. Fresh eggs generally produce less movement or sound.
